Delight in the warmth of spiced Linzer cookies that encase a burst of tangy clementine marmalade. These sandwich cookies are a perfect blend of flavors and textures, making them a joyful treat for any occasion.
Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup ground almonds
- 1/2 cup clementine marmalade
Instructions:
Melt the butter and mix it with the sugar in a large bowl until the mixture is light and fluffy
The vanilla extract should be added
Add the all-purpose flour, ground cinnamon, ground cloves, salt, and ground almonds to a different bowl and mix them together using a whisk
Slowly add the dry ingredients to the wet ones, mixing just until everything is combined
This will make the cookie dough
Separate the dough into two equal parts
Make a disc shape out of each half and cover it with plastic wrap
Put it in the fridge for at least an hour
Warm the oven up to 350F 175C and put parchment paper on baking sheets
On a lightly floured surface, roll out one disc of chilled dough to about 1/8-inch thick
Cut out cookies with a pretty shape in the middle using a Linzer cookie cutter
Use the ready baking sheets to put them on
For 10 to 12 minutes, or until the edges are just beginning to turn golden, bake the cookies
Let the cookies cool for a few minutes on the baking sheets before moving them to a wire rack to cool all the way
Put a little clementine marmalade on top of the solid cookies
Sprinkle powdered sugar on top of the cookies with the cutouts in the middle for decoration
To make sandwich cookies, put the cookies with the sugar on top of the cookies with the marmalade on top
Do it again with the rest of the dough and marmalade
