Ingredients:
- 2 cups almond flour
- 2 tsp coconut sugar
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 3 large eggs or egg substitute for DF
- 1/2 cup unsweetened almond milk or DF milk of choice
- 2 tbsp coconut oil, melted or DF oil of choice
- 1 tsp vanilla extract
- Optional toppings: fresh berries, sliced bananas, pure maple syrup
Instructions:
In a mixing bowl, combine almond flour, coconut sugar, baking soda, and sea salt
In a separate bowl, whisk together eggs or egg substitute, almond milk, melted coconut oil, and vanilla extract
Pour the wet ingredients into the dry ingredients and mix until well combined
Heat a skillet or griddle over medium heat and lightly grease with coconut oil or cooking spray
Pour 1/4 cup of pancake batter onto the skillet for each pancake
Cook until bubbles form on the surface, then flip and cook the other side until golden brown
Serve the pancakes with your choice of toppings, such as fresh berries, sliced bananas, or pure maple syrup
